Super-easy slow-cooker salsa chicken recipe

I’m not much for posting recipes here at Laptops to Lullabies, for three important reasons:
A. I can’t really cook.
B. I never open my cookbooks, and refer to AllRecipes.com for basically everything
C. Seriously. Not much of a cook!
But! I came across this super-easy chicken recipe — probably on a blog somewhere, because, really where else do I get my information? Besides Facebook? — and had to post about it. Because it is SO FREAKING easy.
It’s the perfect recipe for moms because …
A. It can be assembled in literally 10 seconds, and then forgotten about all day (while you tend to your children, keep them alive, etc.)
B. It is a way to cook chicken that doesn’t involve the wondering if it’s done yet (or, if you’re like me, horrible overcooking because you are fearful of pink chicken)
C. It doesn’t involve the stove or oven (no potentials for toddler hand-burning because they won’t leave you the hell alone for 30 seconds and THE KITCHEN IS JUST SO SMALL OMG)
Super-easy slow-cooker salsa chicken
1. Take out your slow-cooker.

2. Dump in a few raw boneless chicken breasts.

3. Dump some salsa over them (enough to cover)
4. Plug in the slow-cooker, set the dial to low, leave it alone for 4-6 hours.

This is the part where I’d show you an after photo, but I got busy and forgot to take one. Babies really eat up (pun intended) your food photography time, you know?
So I borrowed this photo of how it looks, from Freezer Meals For Us. Their recipe is a different (fancier) type of salsa crockpot chicken, but this is how mine looks. So, here!

Looks delish, right? It turns out very shreddy and tender, and is awesome on buns (sloppy sandwich thingys) or on tacos (I lovvvvvvve tacos) or wraps (mmmm) or just by itself, with side dishes.

Enjoy, Mamas!

Confessions of an OC Mama

What? I would never prepare and portion out Baby Boy’s meals, drinks and snacks before leaving him for half a day!
And tape little labels to them? Pffffft!

Er … Maybe I can get a TLC special or something?

The end of breastfeeding

I made it to the year mark!
Golden Boobies, hollllllla!

Of course, now that I have been breastfeeding for more than a full year (wow), I am definitely on board with weaning. Not to be judgey, because it’s a personal decision for everyone, but I feel continuing at this point would put me squarely in hippie-dippie territory. Oops, that was judgey, wasn’t it? Sorry.

I get that there are benefits to extended breastfeeding, but I think that following the “breastfeed for one year” proclamation is pretty damn impressive. I did it, I’m proud, but now it’s done. I mean, the kid rides a bike and eats pizza and cake. He’s not a baby anymore, and … and yeah, it’s just time.

So here is how I’ve been handling the weaning process, which began shortly before Baby Boy turned one — and is still continuing now, three weeks into his second year.

Stage 1 (just before he turned one): I cut out all “in-between” nursings (i.e. randomly throughout the day) and stuck to only before his morning nap, before his afternoon nap, and before bed (as well as once throughout the night).

Stage 2 (a week after he turned one): Began cutting out one of his before-nap nursing sessions

Stage 3 (two weeks after he turned one): Stopped nursing at all during the day. Nursed only at bedtime and during his one wake-up (around 4:30 a.m.). If he woke up at midnight, I would not nurse — just gave him his soother.

Stage 4 (three weeks after he turned one): This is the stage we’re about to begin now. We’ll nurse only at bedtime, and not at any other time (including during the night).

Stage 5 (by the time he is 13 months): Finished nursing entirely.

Baby Boy turns 13 months in one week and two days. Let’s see how this whole thing winds down, shall we? And please join me in prayers for my boobies. Let them not shrivel up into flappy little pancakes, or sad-looking grapes. Let them remain at a decent size and texture. Please!

My Husband Rocks Friday

ME: Ohh, I love cuddling in bed with you guys!

DARLING HUSBAND: Yeah.

ME: I wish we could start every morning this way!

DARLING HUSBAND: Yeah.

ME: I just — OWWW!!! NO! He smashed his forehead into my nose! OW!

DARLING HUSBAND: So you still want to start every morning this way?

ME: Owwwwwww!
